Fluffy and Flourless Banana-Oatmeal Pancake Perfection!

Ditch that dusty flour~
Get ready for a breakfast that's soft, subtly sweet, and surprisingly satisfying. These banana oatmeal pancakes bring the flavor party, and the best part? No flour invited! Just pure, wholesome goodness that will have you and your toppings doing a happy dance.

Ingredients

What You'll Need...

  • 1-2 T. butter/Coconut or Avocado Oil

    2 Eggs

    1/2 C. Oatmeal (Steel Cut/Instant or Regular)

    2 Ripe bananas

    1/8 t. Salt

    1/4 t. Cinnamon

    1/4 t. Vanilla Extract

    Syrup/Jelly/Butter for Serving

     

Intructions

    • Heat a non-stick pan over low-medium heat.  (You don't want the pan too hot) and I highly recommend a non-stick pan for this culinary adventure. 
    • Using a food processor pulse the oatmeal 1 or 2 times to break it up a bit. 
    • Mash the bananas with a fork
    • Mix all the Ingredients in a bowl until you get a smooth batter.  (I used electric beaters for this.)  
    • Let the batter sit for 10 minutes. (it should be free of air bubbles when ready)
    • Butter or Oil your pan and use 1/4 measuring cup to place the batter in the pan.  
    • It should take 2-3 minutes per side.  Watch so it doesn't burn. 
    • Enjoy with your fav. pancake toppings!

Notes

  • You can substitute Oat Bran for the Oatmeal, but I wouldn't use Oat Flour.
  • You can also use defrosted Frozen Bananas 
  • I did accompany this with delicious & crispy air fryer bacon. If you'd like to do the same see below!

AIR FRYER BAD-ASS BACON

  • Pre-heat air fryer for 5 minutes at 375*
  • Layer 4-5 strips of bacon (make sure they aren't overlapping)
  • Air Fry for 10 minutes for regular cut and 12-13 minutes for Thick Cut. 
  • Cook a little longer for extra crispy or a little less for chewy (I do think non-crispy is bacon blasphemy :-)
