Ingredients
INGREDIANTS
1 Watermelon Radish Or Zucchini Squash (spiralized using the curly chip blade)
1 Roma, Heirloom or vine tomato (sliced)
1/4 c. Balsamic vinegar (Try to find a good one either regular or apple or pear works great!)
1 tsp. Dijon mustard
1 T. Honey or maple syrup
1 Clove garlic (minced)
1 Shallot (minced)
1/2C EVOO (Use a good Olive Oil and if you can find a fruity or garlic infused the better!)
Black Pepper to taste
Kosher or sea Salt to taste
Fresh Herbs (optional)
Intructions
Spiralize the Radish or Zucchini
If using Radish soak it in cold water for 10-15 minutes then pat dry.
Add all other ingredients except the EVOO to a small food processor.
As it's running slowly drizzle the EVOO in to make an emulsion.
Let the mixture sit in the fridge for 30 minutes.
Place the zoodles in a bowl or plate and top with sliced tomatoes and fresh herbs and pour the balsamic vinaigrette dressing over it to complete the masterpiece
