Crimson & Crunch! A Radish Rhapsody and Tomato Tango

Ingredients

INGREDIANTS

  • 1 Watermelon Radish Or Zucchini Squash (spiralized using the curly chip blade)

    1 Roma, Heirloom or vine tomato (sliced)

    1/4 c. Balsamic vinegar (Try to find a good one either regular or apple or pear works great!)

    1 tsp. Dijon mustard

    1 T. Honey or maple syrup

    1 Clove garlic (minced)

    1 Shallot (minced)

    1/2C EVOO (Use a good Olive Oil and if you can find a fruity or garlic infused the better!)

    Black Pepper to taste

    Kosher or sea Salt to taste

    Fresh Herbs (optional)

     

Intructions

    • Spiralize the Radish or Zucchini 
      • If using Radish soak it in cold water for 10-15 minutes then pat dry.
    • Add all other ingredients except the EVOO to a small food processor. 
    • As it's running slowly drizzle the EVOO in to make an emulsion. 
    • Let the mixture sit in the fridge for 30 minutes.
    • Place the zoodles in a bowl or plate and top with sliced tomatoes and fresh herbs and pour the balsamic vinaigrette dressing over it to complete the masterpiece
