Tired of the same old breakfast routine? Me too! That's why I decided to unleash my inner noodle ninja and whip up this crazy-delicious Watermelon Radish & leftover Lo-Mein Breakfast Bowl. Imagine: vibrant zoodles, slurp-worthy noodles, and a perfectly poached egg, all swimming in a savory sauce. Trust me, your taste buds will thank you
1 c. Lo-Mein noodles (I like using leftovers from take-out)
1. Watermelon Radish (Bucatini or spaghetti thin in your spiralizer)
1T soy sauce
1T sesame oil (toasted)
1T Rice Wine Vinnegar
1 tsp fresh grated ginger
1 tsp fresh minced garlic
1/2 tsp Chili-Garlic or Chili crisp
1-2 Eggs (for poaching)
1/4 c. green onion (chopped)
1/4c Fresh Parsley and Cilantro (chopped)
1 T sesame seeds (toasted)
After spiralizing the Radish place in bowl filled with cold water for 10-15 minutes (this takes some of the bitterness out)
In a non-stick pan on low-medium heat add 1T of sesame oil and let it get hot.
Take a ramekin or air fryer safe small bowl and spray with Avocado or Olive Oil and fill with 3T cold water.
Set your air fryer to 400 and place the ramekin in and set the timer for 5 mins.
Crack 1 or 2 eggs into a small bowl leaving the yolks intact. After the air fryer has pre-heated for 5 mins reduce the temp. to 360 and put the eggs in the hot ramekin and back in the air fryer for 5 mins.
While the eggs are cooking, drain the radish and pat dry with a paper towel.
Place the Lo-Mein and radish in the pan and cook for 1-2 minutes then add the sauce mixture, garlic/ginger/ green onion and sauté for another minute then add the parsley/cilantro and place in a bowl and top with sesame seeds.
When the air fryer is done carefully use a spatula to slide or lift the poached eggs out and top over the zoodle/noodle bowl!
