The Unexpectedly Awesome cottage Cheese Crust Pizza!

  • I took the "whey" less traveled and ended up with a surprisingly sturdy and delicious pizza crust. Don't knock it 'til you've tried this cheesy underdog.

Ingredients

INGREDIANTS

    • 1 cup cottage cheese (low-curd)
    • 2 large eggs
    • 1/4 cup AP flour
    • 1/8 cup Corn Starch
    • 1 teaspoon onion powder
    • 1 teaspoon Garlic powder
    • 2 teaspoon dried Oregano
    • 1 teaspoon dried Tarragon
    • 1 teaspoon dried basil
    • 1 teaspoon Red Pepper flakes or cayenne powder
    • 1/2  cup Pizza sauce, or marinara
    • 3/4 cup Mozzarella
    •  2 ounces of Pepperoni
      • I used chicken, spinach and sauteed mushrooms (put toppings of your choice!)
    • 1 tablespoon grated parmesan, optional to garnish
    • Black pepper, optional
      • Use other herbs/spices if you'd like!

     

Intructions

    • Preheat the oven to 350F and line a sheet pan with parchment paper or use a silicon mat.
    • In a food processor add the cottage cheese, eggs, flour, Cornstarch and all the herbs and spices. 
    • Pulse a few times to combine. It just needs to be smooth. 
    • Transfer the dough to your sheet pan. Using a spatula, spread the cottage cheese mixture to form a circle or square. Do not spread it too thin. 1/4 in' is picture perfect!
    • Bake for 25-30 minutes or until it is slightly golden brown. Remove and let it sit for 1-2 minutes.
    • Spread 1/2 cup Pizza sauce over the baked cottage cheese crust and top with the cheese then add your awesome toppings.
    • Place back in the oven and bake for another 5-7 minutes until all cheese is melted and everything is ooey gooey good lookin!
    • Sprinkle with Parm and red pepper flakes and enjoy!

Notes

If you'd like to make your own Marinara/pizza sauce:

Must have Marinara!

For this pizza I used leftover shredded chicken breast, Spinach, sauteed mushrooms and diced up pickled jalapenos and the pepperoni, but the topping combinations are whatever your heart desires...just don't use anything too liquidly!  

* Chef's tips:  The cornstarch gives this a cool, crispy crust!

* This re-heats great in the air fryer: 350 for 2-3 minutes!
